Around here lobster pot pie means barely cooked chunks of lobster in a lightly seasoned white sauce with a buttered crumb topping that&#039;s then baked in a moderate oven until bubbly and browned on top  (delicious!).  I&#039;ve never made one with a pastry crust, but think I&#039;d just be careful to not over-cook the lobster if I did. A nice way of seasoning a cream sauce for lobster is to use just a small bit of brandy and a hint of tarragon.</description>
