Around here lobster pot pie means barely cooked chunks of lobster in a lightly seasoned white sauce with a buttered crumb topping that’s then baked in a moderate oven until bubbly and browned on top (delicious!). I’ve never made one with a pastry crust, but think I’d just be careful to not over-cook the lobster if I did. A nice way of seasoning a cream sauce for lobster is to use just a small bit of brandy and a hint of tarragon.
