s'mores-cup-with-marshmallow-fluff-and-graham-cracker-center-with-toffee-bits-on-top

Decadent. Very decadent.  I’ve been missing being able to run out in warm weather to fire up the grill, not only because I love grilled fish, veggies and meats, but also because I love cooking s’mores on the grill.  Not to worry though, because these make-inside candy cups have the chocolate, graham crackers and marshmallow (plus my non-traditional toffee bits too)  that creates the flavor combination we’ve grown up loving. This are easy to make, a great recipe for the kids to help with and ooey-gooey to eat!

Ingredients for Toffee S’mores Cups:

  • 24 oz. semi-sweet chocolate bits
  • Scant 1/2 cup marshmallow fluff
  • 2 graham crackers, divided into 8th’s
  • 1/4 cup Toffee Heath Bar Crunch bits
  • 12 foil cupcake liners, regular size

Directions:

  • Add the chocolate chips to the top pot of a double boiler. Add enough water to the bottom pot to come to just below the bottom of the top pot and bring it to a simmer.  Melt the chips, stirring often and after a few minutes you will have  smooth, silky melted chocolate to line the foil cups.
  • Spoon a teaspoon of the melted chocolate into each of the 12 cups, spreading the chocolate around the bottom and edges.

  • If you’d like to get the chocolate higher up along the sides of the foil cups, allow them to cool (about 1/2 hour) after the first amount of chocolate is added, then spoon some more along the upper sides of the foil cups.
  • Allow the chocolate to finish hardening, which will be about another 1/2 hour.

  • Add a heaping teaspoon of the marshmallow fluff to the bottom of each chocolate cup.
  • Add a piece of graham cracker on top of the fluff and push down firmly.
  • Spoon another teaspoon of melted chocolate on top of the graham cracker. (Reheat gently in the double-boiler if it has thickened too much). Smooth the chocolate around the top, right to the edges.

  • Sprinkle some toffee bits on the top of each cup before the chocolate has cooled and press them gently down into the chocolate.
  • Let the cups finish cooling down for another half hour or so. The foil will peel off of the hardened cup and they are ready to eat. Enjoy!
