For making jam i prefer to speed the extraction process along and just use a large, fine mesh strainer and a masher for seed removal. I only added 1 to 1 1/2 cup organic sugar to my 4 cups organic concord grape juice for my jam. Add this special jam to organic peanut butter and homemade bread and now we are talking better food for better health.

The skins came out great, but the Irish potato cakes were the surprise hit. I'll have to go check my old tea-towels for recipes! :)

Wow, I came across your web page while looking for potato skin recipes, which led me to your Irish potato cakes, and then here. I live in Groveland, just down the road. Small world! We'll try the skins tonight, and maybe the cakes with breakfast tomorrow. - MR
