
What a way to share a lobster! This cool and creamy spread needs only a cup of lobster meat, which is actually less than the equivalent of the meat from a 1 1/4 pound lobster. I use the tail and claws for this recipe, and save what I pick from the body and little legs for bisque or other dishes. This way a $6 lobster makes for some very special treats that don’t break my bank account. Granted, summertime here in Newburyport means I can get Maine lobster for $4.99 a pound, but if you have to pay more this is still a great way to serve the sweet taste of lobster meat for a crowd.
Ingredients for Maine Lobster Dip and Spread recipe: (makes 1 3/4 cup)
- 1 cup cooked lobster meat, finely chopped
- 1 small stalk celery, peeled and minced
- 1 scallion (green onion), minced
- 1/2 cup whipped cream cheese (whipped keeps it light and spreadable)
- Dash of worchestershire sauce
- A pinch of cayenne pepper or a dash of hot sauce
- Salt and pepper to taste
Combine all of the ingredients and chill well. Serve as an appetizer dip with water crackers, bread sticks or a spread for toasted slices of baguette. It’s even better the next day, if you can stand to not eat it right up – enjoy!

Other seafood works well with this dip/spread, such as crab or shrimp.

Thats funny, i have a frozen lobster from a few weeks ago in my freezer.. Hannafor has a great deals on them. I can’t decide on this or your lobster bisque!
