It’s Summertime…..and a light, flavorful salad dressing is welcome. The fact that this simple and easy dressing is healthy and fat-free, made with fresh ingredients that are summer favorites, takes nothing away from it’s robust flavor.  While I made this one with fresh basil for the herb, I’ve also had great success with other fresh herbs such as dill and thyme. Substitute at will, and if you’ve got a matching flavored vinegar, try that too! 

Ingredients for Fat-Free Salad Dressing Recipe:

  • 1 tomato, peeled and most of the seeds removed. For how to remove the skin from a tomato please see here
  • 1/4 cup onion, chopped
  • 1/8 cup fresh lemon juice
  • 1/8 herbal vinegar or  rice wine vinegar
  • 1 small clove garlic
  • 1 tablespoon fresh basil, chopped
  • 1/8 teaspoon dry mustard
  • 2 teaspoons kosher salt
  • Several grates freshly ground black pepper

Place all the ingredients into a food processor, whiz thoroughly, adjust to your taste for salt and pepper and you are done. With it’s nice thick consistency, it’s hard to believe this is a no-oil dressing………enjoy!
