
Cool and creamy, fresh and refreshing – this dip works well with a wide variety of foods. Whether served along side grilled meats, a first course with bread, as part of a crudite platter, or even with chips or crackers, this versatile dip is a great Spring and Summer recipe.
As a big fan of yogurt dips (Tzatziki is another favorite) I know that the better the yogurt – the better the dip! Instead of using a lesser quality yogurt I would be straining the whey from to get to the flavor and creaminess that is wanted for this dip, I used a new product from Stonyfield Farms. Their newly introduced Organic Greek yogurt, Oikos, is a wonderful full-flavored yogurt that was completely suitable to the fresh ingredients I added.
This quick and easy recipe is healthy and tasty – and nice to have on hand for a snack too. If you thin it out with a bit of milk it also makes a terrific salad dressing!
Recipe for Minted Feta Yogurt Dip: (makes 1 1/2 cups)
- 1 cup Greek yogurt
- 3 ounces crumbled feta cheese
- 1/4 red onion, peeled and grated (or very finely minced)
- 1 tablespoon minced garlic (about 2 fat cloves)
- 1 tablespoon minced fresh mint
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon kosher salt or to taste. The amount of salt to add will vary depending on the saltiness of your feta cheese.
- Freshly ground black pepper – several grinds
Combine all of the ingredients, taste for seasoning and allow to sit for at least an hour for the flavors to blend. Garnish with fresh mint leaves, more crumbled feta and serve with meats, breads, vegetables, plain crackers or chips. Enjoy!
