		<description>I picked the letter &#039;I&#039; for recipe night (a group of us who cook for each other once a week) from the scrabble letters and ended up going to Irish Country Cooking for recipes under &quot;I&#039;. I ended up with Cod with sweet and sour beetroot sauce - amazing! AND colcannon. I used kale instead of cabbage and the dinner was a huge success. Since then we have played with other greens and other starches like garbonzo beans... the resulting combos are amazing. Thanks for the introduction!</description>
