
New England style lobster rolls raise tremendous debate as to how much, or little to add to the lobster meat. Celery? To some it’s blasphemous! Black pepper, lemon, mayonnaise……all are scrutinized and discussed, leading to heated discourse as to which restaurant serves the best. Made at home the point is moot and you can do a lobster roll recipe as you please. One thing is for certain though – it must be in a perfectly toasted, buttered New England style hot dog bun.
One chicken sized Maine lobster (about 1 1/4 #) has enough meat without ‘picking the body’ for two generous lobster rolls. This is the meat of half a small lobster.

And back to the bun – a New England style hot dog bun is on the small side and split right across the top. For the perfectly toasted part:

Brush the bun all around with melted butter, and put in a heavy (preferably cast iron) non-stick skillet that doesn’t have any added shortening or oil, heated to medium low.

After about three minutes, the first side will be toasted, flip it and in another three minutes or so, the second side should be ready.

After the sides are taken care of, put it bottom side down for a minute, then toast the top briefly as well.

There you have it – the perfectly toasted buttered bun, ready for the loster prepared the way you like it!

Once the lobster is out of the shell, cut it into chunks. Since it’s so very simple to make, I do custom rolls!
New England Lobster Roll recipe #1 :
-
Meat from half of one small (1 1/4 pond) Maine lobster, cut into bite sized pieces
-
1/2 stalk peeled celery, minced
-
A few grates of freshly ground black pepper
-
New England style hot dog bun, toasted
Mix the first three ingredients together and add to the bun.

New England Style Lobster Roll recipe #2 :
-
Meat from half of one small (1 1/4 pond) Maine lobster, cut into bite sized pieces
-
1 tablespoon mayonnaise
Mix these two ingredients together, and serve with:

1 wedge fresh lemon
-
2 tablespoons melted butter
Squirt some lemon on top, and use the melted butter as a dipping sauce.
Either way, any way, any time lobster is affordable, they are delicious!

When I first read the title of this posting, I thought that someone had thought of a counterpart to Califirnia roll! LOL
The bun, if properly toatsed as you said would be great.
My personal preference would go for poached lobster, home-made mayonnaise and some very light thin leaf/stem greens!
