
Every Christmas time when I was a young girl, I looked forward to seeing my Godmother, Annabelle, coming up the walk with a foil lined Christmasy tin filled with what I thought was the most wonderous of candies. All five of us little Hayesies would dive into them and they were gone just like that! When I was older, and missing some of my childhood traditions, I set out to make them myself – thinking I was really in for it. How do you make chow mein noodle candy? I literally laughed when I was done – stepping back and saying outloud “That’s it?!” Well I’ve picked up the tradition of making them for my family every year, and when all is harried and hurried at the Holidays, I know I can pop these out in no time flat – and they will still be gobbled right up!

Recipe for Butterscotch Peanut Clusters: (also called Haystacks)

1 bag butterscotch morsels

1 dry chow mein noodles

1 cup dry roasted peanuts
Directions:
Melt the morsels in the microwave on low, checking and stirring frequently, for about 4 minutes. If you use a medium size glass mixing bowl for this, everything else can go right in the same bowl.

I like lots of peanuts in mine, so I add a very generous cup or more of the dry roasted nuts. Finish combining everything, mixing and folding over gently. T o the melted morsels and peanuts, add about the cup of chow mein noodles and stir very gently.

Then just drop little clusters onto some wax paper or foil, making them as big or small as you like. They will cool down quite quickly, and in an hour you’ll have a great sweet treat…………I mean, how easy is this? Can you see why I laughed my first time?

I live in Ireland and have no idea what I could substitute for the butterscotch morsels as they are unavailable here.
Are they creamy and fudge-like – somewhat soft like commercially made fudge – or are they crunchy like real butterscotch ?

They are soft like a mini-chocolate kiss. Not sure about a substitute but I’ll see if I can come up with something!
